ENDURrun – Day 1

Most races that I have been at have a fairly limited selection of food after a race, and most of which I won’t touch.  However, this race has the best selection of post-race food I have come across.  If you are gluten-free, vegetarian, vegan, or are a candy lover, they have something for you.

Today, was the first day of the 8 days (7 races over 8 days) and it was a half-marathon.  I placed first for the females who are doing the week long event.  I get to wear the gold jersey tomorrow since I’m in the lead.

I could barely think of food after the race, but everyone hangs around for hours after the event, so I was able to get through the plate of food.  I had a veggie burger, avocado-lime sauce, sweet potatoes, hummus, and two types of quinoa salad.  All of the these items are home-made too!

Sorry for the quality of the photos today, but I didn’t bring my good camera to the race.

Running with Veggies

I'm a plant-based distance runner and mother of two young girls. I enjoy making healthy recipes and experimenting with food. I also love to garden, so you will see many seasonal recipes that use what is currently growing in my backyard. I have a HBSc. in Nutrition and a Doctorate in Education and this background provides me with the skills necessary to pursue my passion - educating others on healthy eating. I don't count calories, so you won't find any nutritional information in my recipes. However, I strive to make each recipe healthy enough to fuel you and your family through the day.
