ENDURrun Day 2

Today was another beautiful day out there for racing.  It was day 2, which is a time trial.  We all start one minute apart with the fastest person starting last.  It is a fun event because you are trying to pass the people in front of you while also not getting caught by the faster people behind you.

I was passed by several people today, which is quite inspiring to watch.  They seemed to just float past me.  Overall, I ended up the first female for the Ultimate competitors (those completing the whole event).  One or two guest female runners did have a better time than me.  My time was pretty much the same as the last two years!

The post-race food was excellent again.  I couldn’t decide on the type of hummus, so I had both.  Today, it is a lighter meal because it is a shorter event, but the options were still plentiful.

Running with Veggies

I'm a plant-based distance runner and mother of two young girls. I enjoy making healthy recipes and experimenting with food. I also love to garden, so you will see many seasonal recipes that use what is currently growing in my backyard. I have a HBSc. in Nutrition and a Doctorate in Education and this background provides me with the skills necessary to pursue my passion - educating others on healthy eating. I don't count calories, so you won't find any nutritional information in my recipes. However, I strive to make each recipe healthy enough to fuel you and your family through the day.
