ENDURrun Day 3

Day 3 was a 30km cross-country trail race.  You complete six 5K loops, which can be difficult when you see the same hills 6 times.  I do not particularly like trails of any kind, so today was one of the races that I don’t look forward to.

Most of the participants finished and there were several spills.  My sister managed to make it through this stage without any injuries, which is fantastic since last year she sprained her ankle at this stage.

I finished first for the ultimate females today, which keeps me in first place and allows me to wear the gold jersey for another day.  I was looped by at least one runner on the forth lap, so if you think I was fast, there were other athletes who were much faster!

No pictures yet of me are uploaded online, but I did manage to take pictures of the prerace food (of course!).  All of these items were vegan, and there were many other options too that I couldn’t fit on plate #1.   The chickpea and apple curried salad was one of my favourites and the mangos were perfect after a hot 30Km.

Running with Veggies

I'm a plant-based distance runner and mother of two young girls. I enjoy making healthy recipes and experimenting with food. I also love to garden, so you will see many seasonal recipes that use what is currently growing in my backyard. I have a HBSc. in Nutrition and a Doctorate in Education and this background provides me with the skills necessary to pursue my passion - educating others on healthy eating. I don't count calories, so you won't find any nutritional information in my recipes. However, I strive to make each recipe healthy enough to fuel you and your family through the day.
