Healthy Elvis Smoothie

 

My husband and I went to Duluth for our anniversary last year and went to this delicious diner. They had this shake that was so delicious, that I just had to make it at home. Their recipe had yogurt and honey in it, which they subbed out for me, and I also changed in my recipe.

This recipe is more of a dessert smoothie; however, you can lighten it up by using unsweetened almond milk in place of the coconut milk, or by thinning it out with almond milk.

MAKES 3 SERVINGS


INGREDIENTS

– 1 can light coconut milk (4oomL)
– 1 tablespoon chia seeds
– 3 tablespoons natural peanut butter
– 1/4 cup large flake oats
– 2 frozen bananas
– 3-4 medjool dates


DIRECTIONS
1. Combine all of the ingredients into a blender and blend.
