Peppermint Energy Balls

These balls are made with natural ingredients, are naturally sweetened, vegan, and gluten-free. Can you say that about most of the cookies you see at Christmas cookie exchanges?

These balls are soft and have a slight peppermint taste to them. If you want to add crunch and more peppermint flavour, you can roll them in crushed candy canes. If you are making these for more people than yourself, you can easily double or triple the recipe.

MAKES 7-8 BALLS


INGREDIENTS
– 1/3 cup coconut butter
– 2/3 cup cashews
– 6-7 medjool dates
– 1 teaspoon mint extract
– pinch of salt


DIRECTIONS
1. Combine all of ingredients into a food processor. Blend until the mixture is finely chopped. You should be able to squeeze the dough into a ball. If not, add an extra date.
2. Rolle into balls. I used a cookie scoop to evenly portion mine.
