Ever since we started a garden, we haven’t bought tomato sauce. It tastes so much better when it is fresh. To make it as convenient as canned sauce, we freeze large batches into individual portions so we have access to healthy tomato sauce all year round. If you do not finish all of this sauce within a couple of days, freeze the leftovers.
This recipe doesn’t take much time to make at all because you just throw most of the ingredients into a blender. You can just sit back and relax while the sauce cooks down.
MAKES APPROXIMATELY 3 CUPS
INGREDIENTS
– 2 pounds roma tomatoes
– 1/4 cup fresh basil
– 2 cloves garlic
– 1 teaspoon organic cane sugar
– 3 tablespoons extra virgin olive oil
– 1 teaspoon salt
– 1/4 teaspoon baking soda
DIRECTIONS
1. Put all of your ingredients, except for the baking soda, into a high-powered blender (e.g., Vitamix) and blend until really smooth.
2. Transfer the contents into a medium sauce pan. Add in the baking soda. Cook down on medium-low heat until your desired consistency.
