Do you meal prep? What does it involve? For how many days? What do you typically prepare?
We’ve only started meal prepping on the weekend over the last couple of months. We’ve always meal-planned because it helps us save money, eat healthier and limit the groceries trips to one a week. Since we both been busier with work and after school activities, our family has benefited from having our meals ready, or parts of it ready to go for the week.
This weekend we made
- caraway rye bread
- hotdog buns
- rice
- almond milk
- a big container of overnight oats for 3 days
- raw buckwheat crackers
- raw coconut cream pie with coconut whip cream
- tofu bacon
- vegan egg roll bowl
- pot of beans
- sprouts
The breads are easy because we use the bread maker. The beans used the slow cooker and the crackers dehydrated overnight. Most of the items required very little hands-on time this week.
Many of the items are multi-purpose too. For example, the rice is used for bowls and stir-fries throughout the week. The almond milk we use for smoothies, overnight oats, and coffee.
I think the coconut pie was my favourite. Sweetened with dates, it is made of coconut meat, coconut butter, coconut flakes, coconut milk, and coconut cream.
